Garlic Butter Cauliflower Rice Recipe

Ingredients
  

Cauliflower

  • 1 head cauliflower, cut into small florets and riced
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • Salt to taste Salt
  • Black pepper to taste Black pepper
  • 1 tbsp fresh lemon juice (optional) Optional
  • 2 tbsp chopped fresh parsley (optional) Optional

Instructions
 

  • Pulse cauliflower in a food processor or grate to rice texture.
  • Heat butter in a skillet, add garlic and onion, cook for 2 minutes.
  • Add cauliflower rice, season with salt and pepper, cook for 5-7 minutes.
  • Stir in lemon juice during the last minute if desired, then remove from heat.
  • Garnish with chopped parsley and serve.

Notes

This dish is quick to prepare and makes a great low-carb side.
