Instructions
Pulse cauliflower in a food processor or grate to rice texture.
Heat butter in a skillet, add garlic and onion, cook for 2 minutes.
Add cauliflower rice, season with salt and pepper, cook for 5-7 minutes.
Stir in lemon juice during the last minute if desired, then remove from heat.
Garnish with chopped parsley and serve.
