Fresh Cucumber Caprese Salad

Ingredients
  

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cucumber cucumber peeled, fork-scored, and thinly sliced, then diced
  • 1.5 cups cherry tomatoes cut into quarters
  • 8 oz fresh mozzarella
  • 0.5 large red onion chopped into small pieces
  • fresh basil leaves optional

Instructions
 

  • Mix olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a bowl. Let it meld while preparing the salad.
  • Peel and fork-score the cucumber, then slice and dice it. Place in a bowl.
  • Quarter the cherry tomatoes and add to the bowl with the cucumber.
  • Dice the red onion and add to the bowl. Omit if preferred.
  • Slice the mozzarella and add to the bowl. Toss everything together.
  • Pour the marinade over the salad, mix well, and let it sit for 10 minutes before serving.

Notes

For a colorful presentation, garnish with fresh basil leaves. Customize by adding grilled chicken for extra protein.
