Instructions
Mix olive oil, balsamic vinegar, oregano, basil, salt, and pepper in a bowl. Let it meld while preparing the salad.
Peel and fork-score the cucumber, then slice and dice it. Place in a bowl.
Quarter the cherry tomatoes and add to the bowl with the cucumber.
Dice the red onion and add to the bowl. Omit if preferred.
Slice the mozzarella and add to the bowl. Toss everything together.
Pour the marinade over the salad, mix well, and let it sit for 10 minutes before serving.
Notes
For a colorful presentation, garnish with fresh basil leaves. Customize by adding grilled chicken for extra protein.
