Ingredients
  

Eggs

  • 6 large eggs

Dairy

  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese

Vegetables

  • 1/3 cup chopped spinach
  • 1/4 cup diced red bell pepper

Herbs & Seasonings

  • 1 tablespoon finely chopped chives

Instructions
 

  • Preheat oven to 350°F (175°C). Prepare muffin tin with spray or liners.
  • Whisk eggs in a bowl. Mix in cottage cheese, cheddar, and parmesan.
  • Fold in spinach, red pepper, chives, salt, and pepper.
  • Divide mixture into muffin cups, about 3/4 full. Bake 20-25 mins until set and golden.
  • Cool briefly, then serve warm or refrigerate for later.
