Instructions
Preheat oven to 350°F (175°C). Prepare muffin tin with spray or liners.
Whisk eggs in a bowl. Mix in cottage cheese, cheddar, and parmesan.
Fold in spinach, red pepper, chives, salt, and pepper.
Divide mixture into muffin cups, about 3/4 full. Bake 20-25 mins until set and golden.
Cool briefly, then serve warm or refrigerate for later.
