Ingredients
  

Dry ingredients

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

Wet ingredients

  • 3/4 cup milk
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 1 ripe banana banana, mashed
  • 1/2 cup blueberries

For cooking

  • as needed Butter or oil for greasing skillet

Instructions
 

  • Mix dry ingredients in a bowl.
  • Whisk wet ingredients, then add mashed banana.
  • Combine wet and dry, then fold in blueberries.
  • Heat skillet, grease lightly, and pour batter in 1/4 cup portions.
  • Cook 2-3 minutes per side until golden. Serve warm.

Notes

For extra fluffiness, do not overmix the batter.
