Ingredients
  

Pasta

  • 8 oz uncooked pasta (penne or rotini)

Sauce

  • 1 tablespoon olive oil
  • 1/2 medium onion (sliced or chopped)
  • 1 can Ro-tel diced tomatoes (10 fl oz, drained)
  • 1/2 cup chicken broth
  • 1 packet fajita seasoning (1 oz)
  • 1/4 cup cream cheese
  • 1.5 cups cooked chicken (shredded or chopped)

Seasoning

  • to taste Salt and pepper

Instructions
 

  • Soften cream cheese at room temperature or microwave for 20 seconds.
  • Cook pasta in salted boiling water until al dente, then drain.
  • Heat olive oil and sauté onion for 5 minutes until tender.
  • Stir in tomatoes, chicken broth, fajita seasoning, and cream cheese; cook until smooth.
  • Add cooked chicken, combine with pasta, and season with salt and pepper. Serve warm.

Notes

For a spicier kick, add some chopped jalapeños or hot sauce.
