Ingredients
  

Eggs and Dairy

  • 2 large eggs
  • 1 tbsp milk
  • 1 tbsp butter or oil

Vegetables and Cheese

  • 1/4 cup shredded cheese
  • 1/4 cup sliced avocado
  • Handful arugula or spinach

Seasonings and Extras

  • Pinch garlic powder
  • Pinch onion powder
  • Pinch chili flakes or hot sauce

Optional Protein

  • to taste cooked chicken, turkey slices, or smoked salmon

Instructions
 

  • Whisk eggs with milk, salt, pepper, garlic powder, and onion powder until frothy.
  • Warm the tortilla in a skillet for 15-30 seconds per side until flexible.
  • Cook eggs low and slow in a skillet with butter/oil, gently stirring until just set but still glossy.
  • Layer eggs, cheese, optional protein, avocado, arugula, and chili flakes on the tortilla, then fold and roll tightly.
  • Toast the seam side in a skillet until golden, then flip and toast the other side until crisp and cheese melts. Rest for 1 minute, then slice and serve warm.

Notes

For extra flavor, add hot sauce or chili flakes to taste.
