Instructions
Whisk eggs with milk, salt, pepper, garlic powder, and onion powder until frothy.
Warm the tortilla in a skillet for 15-30 seconds per side until flexible.
Cook eggs low and slow in a skillet with butter/oil, gently stirring until just set but still glossy.
Layer eggs, cheese, optional protein, avocado, arugula, and chili flakes on the tortilla, then fold and roll tightly.
Toast the seam side in a skillet until golden, then flip and toast the other side until crisp and cheese melts. Rest for 1 minute, then slice and serve warm.
Notes
For extra flavor, add hot sauce or chili flakes to taste.
