  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 teaspoon dried herbs (such as thyme, oregano, or italian seasoning)

Wet Ingredients

  • 1 cup shredded sharp cheddar cheese
  • 1 medium zucchini, grated
  • 1 bottle (12-ounce) beer (pale ale or lager works well)
  • 1/4 cup melted butter (for brushing on top)

Instructions
 

  • Preheat oven to 375°F (190°C) and prepare a 9×5-inch loaf pan.
  • Whisk together flour, baking powder, salt, sugar, and herbs in a bowl.
  • Stir in cheddar cheese and grated zucchini until evenly mixed.
  • Pour in beer and gently mix until combined; do not overmix.
  • Pour batter into the prepared pan and smooth the top.
  • Bake for 45-55 minutes, brush with melted butter, and cool before slicing.

Notes

Serve warm or at room temperature, perfect with butter!
