  • 4 cups yellow squash, thinly sliced
  • 1 medium onion, finely chopped
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed ritz crackers (about 1 sleeve)
  • 2 tablespoons grated parmesan cheese (optional)
  • 2 tablespoons melted butter

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Melt 2 tablespoons of butter in a skillet, add squash and onion, and cook until tender (8-10 minutes).
  • Combine cooled squash mixture with cheese, sour cream, eggs, salt, and pepper in a bowl.
  • Pour mixture into the baking dish and spread evenly.
  • Mix crushed crackers, Parmesan, and melted butter; sprinkle over the casserole.
  • Bake for 30-35 minutes until set and golden brown; let cool before serving.

Notes

Serve warm for best flavor, pairs well with roasted meats.
