Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Melt 2 tablespoons of butter in a skillet, add squash and onion, and cook until tender (8-10 minutes).
Combine cooled squash mixture with cheese, sour cream, eggs, salt, and pepper in a bowl.
Pour mixture into the baking dish and spread evenly.
Mix crushed crackers, Parmesan, and melted butter; sprinkle over the casserole.
Bake for 30-35 minutes until set and golden brown; let cool before serving.
Notes
Serve warm for best flavor, pairs well with roasted meats.
