Ingredients
  

Vegetables and Broth

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 8 cups vegetable broth (preferably low-sodium)
  • 1 teaspoon dried oregano
  • 1 medium yellow potato (about 6 oz), peeled and diced
  • 1 cup dried small pasta shells
  • 1 cup frozen peas, thawed
  • 2 tablespoons lemon juice
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • to taste Salt and black pepper

Instructions
 

  • Heat olive oil in a large pot. Add onion, carrots, and celery; sauté for 10 minutes.
  • Add garlic and cook for 1 minute. Pour in broth, add oregano and potato; bring to a boil, then simmer for 10 minutes.
  • Add pasta and cook for 10–15 minutes until tender. Remove from heat, stir in peas, lemon juice, parsley, and dill.
  • Season with salt and pepper. Serve hot.

Notes

You can customize with your favorite herbs or add a splash of hot sauce for extra flavor.
