yellow onion, diced

carrots, peeled and sliced

stalks
celery, sliced

cloves
garlic, minced

vegetable broth (preferably low-sodium)

dried oregano

yellow potato (about 6 oz), peeled and diced

dried small pasta shells

frozen peas, thawed

lemon juice

chopped fresh parsley

Instructions
Heat olive oil in a large pot. Add onion, carrots, and celery; sauté for 10 minutes.
Add garlic and cook for 1 minute. Pour in broth, add oregano and potato; bring to a boil, then simmer for 10 minutes.
Add pasta and cook for 10–15 minutes until tender. Remove from heat, stir in peas, lemon juice, parsley, and dill.
Season with salt and pepper. Serve hot.
Notes
You can customize with your favorite herbs or add a splash of hot sauce for extra flavor.
