Ingredients
  

olive oil

  • 2 tablespoons Olive oil (for sautéing)

vegetable broth

  • 4 cups Vegetable broth (low-sodium)

tomatoes

  • 4 cups Ripe tomatoes (fresh or canned, crushed)

carrots

  • 2 medium Carrots (diced)

celery

  • 2 stalks Celery (diced)

onion

  • 1 medium Onion (diced)

rice

  • 1 cup Long grain rice (rinsed)

garlic

  • 2 cloves Garlic (minced)

basil

  • ¼ cup Fresh basil (chopped)

salt

  • to taste Salt

black pepper

  • to taste Black pepper

red pepper flakes

  • 1 teaspoon Red pepper flakes (optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion, carrots, and celery until tender, about 5 minutes.
  • Add garlic and cook for 1 minute.
  • Pour in vegetable broth and crushed tomatoes, bring to a boil.
  • Add rice, basil, salt, pepper, and red pepper flakes; simmer until rice is cooked, about 20 minutes.

Notes

You can add more herbs or adjust seasoning to taste for extra flavor.
