Ingredients
  

Canned Goods

  • 28 oz can of whole tomatoes
  • 1 cup chicken broth
  • 1 TBSP brown sugar
  • 2 tsp onion powder
  • 8-10 fresh basil leaves basil leaves (or dried leaves)
  • ¼ cup butter
  • ¼ cup heavy cream (optional)

Instructions
 

  • Drain the tomatoes and place them in a microwave-safe bowl. Add broth, brown sugar, onion powder, and basil; stir gently.
  • Cover loosely and microwave for 5 minutes. Let sit for 3-4 minutes, then add butter and stir until melted.
  • Puree the soup with an immersion blender until smooth. Transfer to bowls.
  • Garnish with a drizzle of cream and a basil leaf if desired. Serve hot.

Notes

For a richer flavor, simmer the soup on the stove instead of microwaving.
