Ingredients

  • 1 lb beef sirloin or flank steak, thinly sliced

Vegetables

  • 2 cups fresh vegetables (bell peppers, broccoli, snap peas)

Grains

  • 1 cup jasmine or basmati rice

Sauce

  • 0.25 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions
 

  • Prepare rice according to package instructions.
  • Thinly slice beef against the grain into strips.
  • Whisk soy sauce, brown sugar, garlic, and ginger to make the sauce.
  • Cook beef in a skillet with oil for 3-4 minutes until browned.
  • Add vegetables and stir-fry for 2-3 minutes. Pour sauce over and simmer for 1 minute.
