  • 1 cup unsalted butter (room temperature)
  • 2/3 cup granulated sugar plus 3 tablespoons for rolling
  • 2 cups all-purpose flour spooned and leveled
  • 1 teaspoon vanilla extract optional, but recommended
  • rainbow sprinkles or nonpareils for topping optional

Instructions
 

  • Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.
  • Beat the softened butter and 2/3 cup of sugar until combined, then add flour and mix until a dough forms. Optionally blend in vanilla.
  • Scoop out 1-inch dough balls, roll in sugar, and place on baking sheets spaced 2 inches apart.
  • Flatten each dough ball with a glass and optionally sprinkle with toppings.
  • Bake for 14 to 16 minutes until edges are slightly golden, then cool on the baking sheet.

Notes

For best results, ensure butter is at room temperature before mixing.
