Ingredients
  

Zucchini

  • 3 to 4 medium to large zucchinis medium to large size

Ground Beef

  • 1 pound lean ground beef (80/20)

Worcestershire Sauce

  • 1 tablespoon Worcestershire sauce

Olive Oil

  • 1.5 tablespoons olive oil

Chopped Onion

  • 1/2 cup chopped onion

Chopped Red Bell Pepper

  • 1/3 cup chopped red bell pepper

Minced Garlic

  • 3 teaspoons garlic cloves approximately 3 teaspoons

Zucchini Flesh

  • 1.5 cups zucchini flesh scooped out flesh, about 1.5 cups

Tomato Sauce

  • 8 ounces tomato sauce 1 cup

Italian Seasoning

  • 1 teaspoon Italian seasoning

Dry Basil

  • 1/2 teaspoon dry basil

Pink Himalayan Salt

  • 1 teaspoon pink Himalayan salt

Ground Black Pepper

  • 1/2 teaspoon ground black pepper

Red Pepper Flakes

  • 1/4 teaspoon red pepper flakes optional

Cooked Brown Rice

  • 1 cup cooked brown rice

Parmesan Cheese

  • 1/2 cup parmesan cheese

Mozzarella Cheese

  • 3/4 cup mozzarella cheese

Fresh Parsley

  • optional fresh parsley for garnish

Instructions
 

  • Slice zucchinis in half lengthwise, scoop out flesh, and set aside.
  • Cook ground beef with Worcestershire sauce; set aside.
  • Sauté onion, peppers, garlic, and zucchini flesh; add beef, rice, tomato sauce, seasonings, and simmer. Stir in Parmesan.
  • Stuff zucchini halves with filling, top with cheese, and bake at 375°F for 20-25 minutes until golden.
  • Garnish with parsley if desired and serve.

Notes

For best results, use fresh herbs and high-quality cheese.
