Ingredients
  

Vegetables

  • 4 cups yellow squash, thinly sliced
  • 1 cup onion, finely chopped

Dairy

  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 large eggs, beaten
  • 1 cup crushed buttery crackers (such as ritz)
  • 3 tablespoons butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 cup milk

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  • Boil salted water, add squash and onions, cook for 5 minutes, then drain.
  • Mix drained vegetables with cheese, mayonnaise, eggs, salt, pepper, garlic powder, and milk.
  • Pour mixture into baking dish and spread evenly.
  • Combine crushed crackers with melted butter and sprinkle on top.
  • Bake for 35-40 minutes until bubbly and golden brown.

Notes

Let the casserole cool for a few minutes before serving for best flavor.
