Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain excess grease and set aside.
Whisk together eggs, milk, salt, pepper, garlic powder, and smoked paprika in a large bowl.
Layer cooked sausage, optional vegetables, and shredded cheese in the greased dish. Top with bread cubes if using, then pour the egg mixture evenly over the top.
Bake for 30-40 minutes, or until the center is set and the top is golden brown.
Let cool for 5 minutes before slicing and serving warm.

Customize with optional vegetables like bell peppers, spinach, or onions. Leftover bread can be used for the bread cubes.
