Instructions
Optional: Sear beef cubes in a skillet until browned.
Add vegetables and seared beef to the crockpot, then stir in tomato paste and Worcestershire sauce.
Add bay leaves, thyme, salt, and pepper, then pour in beef broth.
Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours.
Optional: Mix cornstarch and water to create a slurry, stir into stew, and cook for 15–20 minutes to thicken.
Remove bay leaves, adjust seasoning, garnish with parsley, and serve.
Notes
For a thicker stew, add cornstarch slurry at the end and cook a few minutes longer.
