Easy Pioneer Woman's Crockpot Beef Stew

Ingredients
  

Meat

  • 900 g beef chuck roast, cut into cubes

Vegetables

  • 4 medium carrots, peeled and chopped
  • 4 medium potatoes, peeled and chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced

Broth and Sauces

  • 750 ml beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce

Seasonings

  • 2 bay leaves bay leaves
  • 1 teaspoon dried thyme
  • to taste Salt
  • to taste Black pepper

Thickening (Optional)

  • 2 tablespoons cornstarch for thickening
  • 2 tablespoons water for slurry

Garnish

  • as needed Fresh parsley for garnish

Instructions
 

  • Optional: Sear beef cubes in a skillet until browned.
  • Add vegetables and seared beef to the crockpot, then stir in tomato paste and Worcestershire sauce.
  • Add bay leaves, thyme, salt, and pepper, then pour in beef broth.
  • Cover and cook on LOW for 8–10 hours or HIGH for 4–5 hours.
  • Optional: Mix cornstarch and water to create a slurry, stir into stew, and cook for 15–20 minutes to thicken.
  • Remove bay leaves, adjust seasoning, garnish with parsley, and serve.

Notes

For a thicker stew, add cornstarch slurry at the end and cook a few minutes longer.
