Ingredients
  

Tuna Patties

  • 3 cans tuna (drained)
  • 2 large eggs (whisked)
  • 0.33 cup grated parmesan cheese
  • 0.25 cup mayonnaise
  • 1 tbsp dijon mustard
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp lemon zest
  • 1 tsp garlic powder
  • 0.25 tsp sea salt
  • 0.25 tsp black pepper (freshly ground if possible)
  • 2 tbsp olive oil (or other oil like vegetable or canola)

Instructions
 

  • Drain and flake the tuna into a bowl.
  • Add eggs, parmesan, mayonnaise, mustard, parsley, lemon zest, garlic powder, salt, and pepper; mix well.
  • Shape mixture into patties, about 1/4 cup each.
  • Heat oil in a skillet over medium heat; cook patties for 4-5 minutes per side until golden brown.
  • Drain on paper towels and serve hot!

Notes

For extra flavor, try adding some spices or hot sauce to the mixture!
