  • 1 pound Boneless Chicken Breasts (cut into bite-sized pieces)

Vegetables

  • 1 medium Zucchini (diced)
  • 2 medium Bell Peppers (colorful mix)
  • 1 cup Cherry Tomatoes (halved)
  • 2 cups Fresh Spinach

Pasta

  • 12 ounces Pasta (penne or fusilli) (one-pot friendly shapes)

Seasonings & Oils

  • 3 cloves Garlic (minced)
  • 4 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 1/2 cup Parmesan Cheese (grated)
  • 2 teaspoons Italian Seasoning
  • to taste Salt Salt
  • to taste Pepper Pepper
  • 1/4 teaspoon Red Pepper Flakes (optional)

Instructions
 

  • In a large pot, heat olive oil and cook chicken until browned.
  • Add garlic and cook for 1 minute, then add vegetables and broth.
  • Bring to a boil, then add pasta and cook until al dente, about 10 minutes.
  • Stir in spinach, Parmesan, and seasonings; cook until spinach wilts.
  • Serve hot, garnished with extra Parmesan if desired.
