Ingredients
  

Dry Lentils

  • 1 cup dry lentils (red or brown for a creamy texture)

Canned Tomatoes

  • 1 can canned tomatoes (whole or crushed)

Vegetables

  • 1 medium medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium medium carrot (diced)
  • 1 stalk celery (chopped)

Broth & Oils

  • 4 cups vegetable broth
  • 2 tablespoons olive oil (for sautéing)

Spices & Seasonings

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt salt
  • to taste black pepper black pepper

Fresh Herbs & Lemon

  • 2 tablespoons fresh parsley or cilantro (chopped)
  • 1 tablespoon lemon juice (splash at the end)

Instructions
 

  • Heat olive oil in a large pot and sauté chopped onions, garlic, carrots, and celery until softened.
  • Add lentils, canned tomatoes, vegetable broth, cumin, paprika, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 20 minutes until lentils are tender.
  • Stir in chopped parsley or cilantro and a splash of lemon juice before serving.
