Ingredients
  

Dough

  • 0.75 cup water
  • 0.75 cup milk (or dairy-free alternative)
  • 2.25 tsp active dry yeast
  • 2.5 cups gluten-free all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • 1.25 tsp kosher salt
  • 5-6 tbsp olive oil (divided)

Topping

  • 1 sprig fresh rosemary

Instructions
 

  • Combine water and milk, warm, add yeast, and let sit 5 minutes.
  • Mix gluten-free flour, sugar, baking powder, and salt on low speed.
  • Add yeast mixture and 3 tbsp olive oil; mix until thick and pourable (~6 min).
  • Grease skillet, spread batter evenly, drizzle with remaining oil, create indentations, sprinkle salt and rosemary.
  • Let rise 30 minutes, preheat oven to 350°F (177°C), then bake 30-35 minutes until golden.

Notes

Ensure batter is pourable but not too runny for best texture.
