Easy Homemade Beef Stew

Ingredients
  

Meat

  • 2 pounds Beef Chuck Roast (cut into 2-inch chunks, excess fat removed)
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Coarsely Ground Black Pepper
  • 2 tablespoons Gluten-free All-Purpose Flour (or Whole Wheat for non-gluten)
  • 2 tablespoons Olive Oil (or avocado oil)

Vegetables

  • ½ large Yellow Onion (Chopped)
  • 4 cloves Garlic Cloves (minced)
  • 1 large Carrot (cut into 2-inch chunks)
  • 2 Yukon Gold Potatoes diced into 2-inch pieces

Broth & Paste

  • 2 cups Beef Broth
  • ¼ cup Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 bay leaf Bay Leaves
  • 2 teaspoons Fresh Thyme Leaves (to garnish)

Instructions
 

  • Preheat oven to 325°F (160°C).
  • Season beef with salt and pepper, coat with flour, then brown in oil. Set aside.
  • Sauté onions, garlic, and carrots in the same pot for 2-3 minutes.
  • Add potatoes, broth, tomato paste, bay leaf, thyme, and Worcestershire. Scrape browned bits.
  • Bring to simmer, return beef, cover, and bake for 2-2.5 hours until beef is tender. Season to taste and serve.

Notes

For richer flavor, let the stew rest for a few minutes before serving.
