  • 4 medium zucchinis Halved lengthwise and scooped out to create "boats"
  • 1 pound ground beef Lean ground beef works best
  • 1 small onion Diced
  • 2 cloves garlic Minced
  • 1 cup tomato sauce Flavorful base for filling
  • 1 cup shredded cheese Mozzarella, cheddar, or parmesan
  • 1 tablespoon olive oil For sautéing
  • 1 teaspoon Italian seasoning Herb blend for flavor
  • 1/2 teaspoon paprika Adds smokiness
  • to taste salt & pepper Seasoning to preference

Instructions
 

  • Sauté diced onions and minced garlic in olive oil until fragrant.
  • Add ground beef and cook until browned, then stir in tomato sauce, Italian seasoning, paprika, salt, and pepper.
  • Stuff the zucchini boats with the beef mixture and top with shredded cheese.
  • Bake at 375°F (190°C) for 15-20 minutes until cheese is melted and bubbly.

Notes

For a lower sodium option, reduce salt and use low-sodium tomato sauce.
