  • 1/2 tsp baking powder

Wet ingredients

  • 1.5 tbsp coconut oil
  • 2 eggs eggs
  • 1 cup cottage cheese preferably thick
  • pinch salt salt

Additional toppings

  • to taste honey
  • smoked salmon smoked salmon
  • creme fraiche creme fraiche adds tangy richness

Instructions
 

  • In a blender, combine oats, baking powder, eggs, cottage cheese, salt, and coconut oil until smooth.
  • Preheat your waffle iron and lightly grease if needed.
  • Pour batter into the waffle iron and cook until golden brown, about 3-4 minutes.
  • Serve waffles topped with honey, smoked salmon, and a dollop of creme fraiche.
