Ingredients
  

Meat

  • 2 pounds beef tenderloin for a larger roast
  • 1.5 teaspoons fine sea salt divided
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons minced garlic from 4 to 5 cloves
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon minced fresh rosemary leaves or ½ teaspoon dried rosemary
  • 0.5 teaspoon minced fresh thyme leaves or ¼ teaspoon dried thyme

Instructions
 

  • Trim the beef, tie with twine, and season with 1 teaspoon salt. Rest for 1 hour at room temperature.
  • Preheat oven to 500°F (260°C). Mix olive oil, remaining salt, garlic, pepper, rosemary, and thyme. Rub all over the beef.
  • Roast for 28–30 minutes until internal temperature reaches 130°F (54°C). Rest for 10 minutes before slicing.

Notes

Use a meat thermometer for best results and let the beef rest before slicing.
