beef tenderloin

fine sea salt

extra-virgin olive oil

minced garlic

minced fresh rosemary leaves
or ½ teaspoon dried rosemary

or ¼ teaspoon dried thyme
Instructions
Trim the beef, tie with twine, and season with 1 teaspoon salt. Rest for 1 hour at room temperature.
Preheat oven to 500°F (260°C). Mix olive oil, remaining salt, garlic, pepper, rosemary, and thyme. Rub all over the beef.
Roast for 28–30 minutes until internal temperature reaches 130°F (54°C). Rest for 10 minutes before slicing.
Notes
Use a meat thermometer for best results and let the beef rest before slicing.
