Instructions
Melt butter in a large pot, add onion, garlic, and Italian seasoning. Sauté until fragrant, about 5 minutes.
Add tomatoes and chicken stock. Bring to a boil, then simmer covered for 30 minutes.
Blend the soup until smooth using an immersion blender.
Stir in cream, basil, and cooked rice. Heat through and serve garnished with cheese and basil.
Notes
For extra flavor, add a splash of balsamic vinegar or a pinch of red pepper flakes.
