Instructions
Whisk cornstarch, chicken broth, soy sauce, and honey; set aside.
Sauté diced chicken in 1 tbsp olive oil until browned; remove and set aside.
Cook vegetables in remaining oil until tender-crisp; add ginger and garlic, cook 1-2 minutes.
Return chicken to pan, add sauce, bring to boil, and cook 1 minute to thicken.
Top with sesame seeds and serve hot, optionally over rice.
Notes
For extra flavor, add a splash of sesame oil or chopped green onions before serving.
