Ingredients
  

Protein

  • 3 pieces boneless chicken breasts diced into 1 inch pieces

Seasonings

  • 1/2 tsp salt
  • 1/2 tsp pepper

Vegetables

  • 2 cups broccoli florets diced into bite size pieces
  • 1/2 Yellow Bell Pepper Yellow Bell Pepper cut into 1 inch pieces
  • 1/2 red bell pepper Red Bell Pepper cut into 1 inch pieces
  • 1/2 cup carrots shredded

Spices & Aromatics

  • 1/2 tsp ground ginger
  • 2 tsp minced garlic

Seeds & Sauces

  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions
 

  • Whisk cornstarch, chicken broth, soy sauce, and honey; set aside.
  • Sauté diced chicken in 1 tbsp olive oil until browned; remove and set aside.
  • Cook vegetables in remaining oil until tender-crisp; add ginger and garlic, cook 1-2 minutes.
  • Return chicken to pan, add sauce, bring to boil, and cook 1 minute to thicken.
  • Top with sesame seeds and serve hot, optionally over rice.

Notes

For extra flavor, add a splash of sesame oil or chopped green onions before serving.
