Ingredients
  

Meat

  • 1 lb Ground beef Choose lean for less fat

Vegetables

  • 2 cups Bell peppers Mix of colors
  • 1 cup Onion Chopped
  • 1 medium Zucchini Sliced
  • 2 medium Carrots Thinly sliced

Seasonings & Sauces

  • 1 tbsp Olive oil For cooking
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika
  • 2 tbsp Soy sauce
  • 1 tsp Dried herbs oregano or thyme
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Fresh parsley or cilantro Chopped
  • 1/4 tsp Red pepper flakes To taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and cook until browned, then set aside.
  • Sauté onions, bell peppers, carrots, and zucchini until tender.
  • Return beef to the skillet, add soy sauce, herbs, and seasonings; cook for another 3-5 minutes.
  • Stir in cherry tomatoes and cook briefly until they soften. Garnish with parsley or cilantro before serving.

Notes

For a lower sodium option, reduce soy sauce and salt accordingly.
