Instructions
Heat olive oil in a large skillet over medium heat.
Add ground beef and cook until browned, then set aside.
Sauté onions, bell peppers, carrots, and zucchini until tender.
Return beef to the skillet, add soy sauce, herbs, and seasonings; cook for another 3-5 minutes.
Stir in cherry tomatoes and cook briefly until they soften. Garnish with parsley or cilantro before serving.
Notes
For a lower sodium option, reduce soy sauce and salt accordingly.
