Ingredients
  

  • 6 strips bacon
  • 1/2 medium onion chopped
  • 4 large Russet potatoes diced
  • 1/4 cup flour
  • 4 cups whole milk
  • 1 cup chicken broth
  • 1 clove garlic minced
  • 3/4 cup cheddar cheese grated, or more to taste
  • Chopped scallions to taste
  • 3/4 cup sour cream or more to taste
  • Salt & pepper to taste

Instructions
 

  • Fry bacon until crispy, then set aside. Sauté onion in bacon fat for 5 minutes.
  • Stir in flour, cook for 1 minute, then whisk in milk. Add broth, garlic, and potatoes. Simmer for 20 minutes.
  • Mash potatoes slightly, then stir in sour cream and most of the cheddar and bacon. Season with salt and pepper.
  • Top each bowl with remaining cheddar, bacon, and scallions.

Notes

Customize with additional toppings like diced tomatoes or chives for extra flavor.
