Easy Apple Tuna Salad

Ingredients
  

Canned Goods

  • 5 oz albacore tuna (no salt added)
  • 1 piece apple
  • 1 rib celery rib
  • 0.5 small red onion
  • 2 tbsp crushed raw walnuts
  • 1 tbsp dried cranberries
  • 2 tbsp mayo (avocado oil based)
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.25 tsp pink sea salt
  • 0.25 tsp black pepper

Instructions
 

  • Drain tuna and add to a large bowl. Slice celery and dice onion and apple. Toss all ingredients with tuna, walnuts, and cranberries.
  • Mix mayo, Dijon mustard, lemon juice, salt, and pepper in a small bowl to make dressing.
  • Pour dressing over salad and toss until evenly coated.
  • Serve over greens, toast, or as a sandwich. Enjoy!

Notes

Use fresh ingredients for best flavor. Store leftovers in an airtight container.
