Ingredients
  

Protein

  • 1 lb ground turkey

Vegetables

  • 2 medium sweet potatoes diced
  • 1 tablespoon olive oil
  • 1 unit onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste Salt and pepper

Optional greens

  • to taste Fresh spinach or kale

Toppings

  • to taste Avocado or Greek yogurt for topping

Instructions
 

  • Dice sweet potatoes, chop onion and garlic.
  • Heat olive oil in a large skillet over medium heat.
  • Sauté onions for 3-4 minutes, add garlic for 30 seconds.
  • Add ground turkey, cook 5-7 minutes until no longer pink, then season with paprika, cumin, salt, and pepper.
  • Add sweet potatoes and 1/4 cup water, cover and cook 15-20 minutes until tender. Add greens in last minute if desired. Serve topped with avocado or Greek yogurt.
