Instructions
If dry, soak dates in warm water for 5 minutes, then drain.
Add dates, nuts, and oats to a food processor; pulse until coarse and sticky.
Mix in cinnamon and lemon zest; pulse briefly to blend.
If mixture is crumbly, add maple syrup and pulse until cohesive.
Form into 1-inch balls and place on parchment-lined tray.
Chill for 15 minutes before serving.
