Ingredients
  

Dried Fruits and Nuts

  • 1 cup Medjool dates, pitted
  • 0.5 cup mixed nuts (almonds, walnuts, cashews)
  • 0.5 cup rolled oats
  • 0.25 tsp ground cinnamon
  • 1 tsp lemon zest
  • 1 tbsp maple syrup (if needed)

Instructions
 

  • If dry, soak dates in warm water for 5 minutes, then drain.
  • Add dates, nuts, and oats to a food processor; pulse until coarse and sticky.
  • Mix in cinnamon and lemon zest; pulse briefly to blend.
  • If mixture is crumbly, add maple syrup and pulse until cohesive.
  • Form into 1-inch balls and place on parchment-lined tray.
  • Chill for 15 minutes before serving.

Notes

Store in an airtight container in the fridge for up to a week.
