Ingredients
  

  • 2 large English cucumbers thinly sliced
  • 1/2 small red onion thinly sliced
  • 1/3 cup white vinegar
  • 2 tablespoons granulated sugar
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried dill or 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh dill chopped

Instructions
 

  • In a small bowl, whisk together the vinegar, sugar, water, salt, and pepper until the sugar dissolves.
  • Slice cucumbers and red onion thinly using a mandoline or sharp knife.
  • In a large bowl, combine the cucumbers, red onion, and dill.
  • Pour the vinegar mixture over the vegetables and toss to coat evenly.
  • Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  • Serve chilled as a refreshing side dish.

Notes

For extra flavor, let the salad marinate longer in the refrigerator. Adjust the amount of dill to your taste.
