Crockpot Beef Stew Recipe

Ingredients
  

olive oil

  • 2 tablespoons olive oil divided

beef cubes

  • 2 pounds boneless stewing beef cubes or chuck
  • 0.5 medium onion medium onion chopped
  • 6 cloves garlic minced
  • 1 pound Yukon Gold potatoes peeled & diced
  • 4 large large carrots peeled & cut into large pieces
  • 3 stalks celery chopped
  • 3 cups beef broth
  • 6 ounces tomato paste see note
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • to taste pepper
  • 3 bay leaves bay leaves
  • 2 tablespoons cornstarch optional

Instructions
 

  • Sear half the beef in 1 tablespoon of oil until browned, then transfer to the slow cooker. Repeat with remaining beef.
  • Cook onion in skillet for 3-4 minutes, add garlic, then transfer to the slow cooker.
  • Add remaining ingredients (except bay leaves and cornstarch) to the slow cooker and stir well.
  • Add bay leaves, cook on low for 10 hours until beef is tender.
  • Optional: Mix cornstarch with cold water, stir into stew, and cook 10 minutes until thickened.

Notes

This stew tastes even better the next day. Feel free to add your favorite vegetables for extra flavor.
