Ingredients
  

Protein

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 2 cans cream of chicken soup (10.5 ounces each)
  • 3 teaspoons garlic (minced)
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried thyme
  • 12 ounces frozen mixed vegetables
  • 0.5 cup sour cream
  • 8 ounces cream cheese
  • 1.5 cups cheddar cheese (grated)
  • 16 ounces penne pasta (or small noodle pasta)

Instructions
 

  • Add broth, soup, garlic, pepper, Italian seasoning, paprika, onion powder, thyme, and vegetables. Mix well.
  • Place chicken in the sauce, toss to coat, then cook on high 3-4 hours or low 5-6 hours.
  • Shred chicken, return to pot, add sour cream, cream cheese, and cheddar; stir and cook 30 minutes.
  • Cook pasta until al dente, drain, add to crock pot, and toss to coat.

Notes

For extra flavor, sprinkle with fresh herbs before serving.
