Ingredients
  

  • 1 medium eggplant cut into french fry shapes
  • 1.5 cups gluten-free/panko breadcrumbs
  • 0.5 cup grated parmesan cheese
  • 2 large eggs lightly whisked
  • Salt and pepper
  • Olive oil cooking spray
  • 1 cup marinara sauce store-bought or homemade, optional for serving

Instructions
 

  • Preheat oven to 425°F and line a baking sheet with parchment paper.
  • Cut the eggplant into planks, then into french fry shapes (about 4 inches long and 1 inch wide).
  • Place whisked eggs in a shallow bowl and season with salt and pepper. In a separate bowl, combine breadcrumbs and parmesan cheese.
  • Dredge each eggplant fry in egg, then breadcrumbs, and place on the baking sheet in a single layer, 1-2 inches apart.
  • Spray with olive oil cooking spray and bake for 20-25 minutes, turning halfway through.
  • Remove, sprinkle with sea salt, and serve warm with marinara sauce.

Notes

For an extra crispy texture, ensure the eggplant fries are spaced out and not overcrowded on the baking sheet.
