store-bought or homemade, optional for serving
Instructions
Preheat oven to 425°F and line a baking sheet with parchment paper.
Cut the eggplant into planks, then into french fry shapes (about 4 inches long and 1 inch wide).
Place whisked eggs in a shallow bowl and season with salt and pepper. In a separate bowl, combine breadcrumbs and parmesan cheese.
Dredge each eggplant fry in egg, then breadcrumbs, and place on the baking sheet in a single layer, 1-2 inches apart.
Spray with olive oil cooking spray and bake for 20-25 minutes, turning halfway through.
Remove, sprinkle with sea salt, and serve warm with marinara sauce.
Notes
For an extra crispy texture, ensure the eggplant fries are spaced out and not overcrowded on the baking sheet.
