  • 1 lb chicken tenderloins
  • 1 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • salt and pepper to taste
  • cooking spray or olive oil for greasing

Instructions
 

  • Preheat oven to 400°F (200°C) and prepare a baking sheet.
  • Mix panko, Parmesan, garlic powder, paprika, oregano, thyme, salt, and pepper in a bowl.
  • Beat the eggs in another bowl.
  • Dip chicken in eggs, then coat with breadcrumb mixture.
  • Arrange on the baking sheet and bake for 15-20 minutes until golden.
  • Serve with dipping sauces or salad.

Notes

For extra crispiness, broil for the last 2 minutes of baking.
