Instructions
Sear the salmon in a hot skillet with olive oil, seasoned with salt and pepper, for 1-3 minutes per side.
Remove salmon and make the sauce by melting butter, adding garlic, and cooking until fragrant.
Add chopped and whole cherry tomatoes, then pour in heavy cream and season with salt, basil, and cayenne.
Simmer the sauce, then stir in parmesan and spinach until thickened.
Mix in fresh basil and return the salmon to the pan to heat through.
Serve with your choice of sides or on its own.

Serve with pasta or a fresh salad for a complete meal.
