Ingredients
  

Protein

  • 4 pieces boneless, skinless chicken breasts

Oil

  • 2 tbsp olive oil divided

Spices & Seasonings

  • 1 tsp Italian seasoning
  • Salt and pepper to taste Salt and pepper
  • 3 cloves garlic cloves, minced

Sun-dried tomatoes

  • 1/3 cup sun-dried tomatoes (oil-packed), chopped

Vegetables

  • 2 cups fresh baby spinach

Dairy & Broth

  • 1 cup heavy cream
  • 1/2 cup chicken broth

Cheese & Spices

  • 1/3 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/4 tsp red pepper flakes (optional)

Fresh herbs

  • as needed Fresh basil for garnish

Instructions
 

  • Pat chicken dry. Rub with Italian seasoning, salt, and pepper.
  • Heat 1 tbsp oil in skillet. Cook chicken 5-6 mins per side until golden. Remove and set aside.
  • In same skillet, heat remaining oil. Sauté garlic 30 sec. Add sun-dried tomatoes and spinach; cook until spinach wilts (1-2 mins).
  • Pour in cream and broth, scrape browned bits. Stir in Parmesan, paprika, red pepper flakes. Simmer 3-4 mins until slightly thickened.
  • Return chicken to skillet, spoon sauce over. Cook 2-3 mins until chicken reaches 165°F. Garnish with basil.

Notes

For extra flavor, let the sauce simmer longer to thicken.
