Instructions
Slice chicken in half lengthwise, season with salt, pepper, Italian seasoning, and paprika.
Heat olive oil, sear chicken 4-5 minutes per side until golden, then set aside.
Melt butter, sauté garlic 30 seconds, add cream and broth, simmer 3-4 minutes, then stir in parmesan, onion powder, and red pepper flakes.
Add sun-dried tomatoes, soften, then add spinach until wilted.
Return chicken to skillet, simmer 5 minutes, garnish with parsley, and serve.
Notes
For a lighter version, use half-and-half instead of heavy cream.
