Ingredients
  

Chicken

  • 2 large boneless, skinless chicken breasts or 4 small
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes (optional) for spice
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 tablespoon fresh parsley, chopped for garnish

Instructions
 

  • Slice chicken in half lengthwise, season with salt, pepper, Italian seasoning, and paprika.
  • Heat olive oil, sear chicken 4-5 minutes per side until golden, then set aside.
  • Melt butter, sauté garlic 30 seconds, add cream and broth, simmer 3-4 minutes, then stir in parmesan, onion powder, and red pepper flakes.
  • Add sun-dried tomatoes, soften, then add spinach until wilted.
  • Return chicken to skillet, simmer 5 minutes, garnish with parsley, and serve.

Notes

For a lighter version, use half-and-half instead of heavy cream.
