Instructions
Heat 3 tbsp olive oil in a large pot over medium heat.
Sauté diced onion for 3-4 minutes, then add garlic and red pepper flakes; cook 20 seconds. Season with salt and pepper.
Add tomato paste, sugar, and chicken stock; bring to a boil.
Stir in orzo and cook 20-22 minutes, stirring frequently. Add more stock if needed; should be loose and creamy.
Once tender, stir in heavy cream and parmesan; season with salt and pepper, cook 1 minute, then remove from heat.
In a separate skillet, heat 1 tbsp olive oil over medium-high. Cook seasoned shrimp 40 seconds per side.
Serve shrimp over creamy tomato orzo and enjoy warm.
