Instructions
Heat olive oil in a large pot and sauté the onion until soft, about 5-7 minutes.
Add garlic and cook for 1-2 minutes until fragrant.
Stir in tomatoes, sugar, salt, pepper, oregano, and broth; simmer for 20 minutes.
Puree the soup with basil leaves using an immersion blender or in batches in a blender.
Stir in heavy cream, warm through, and adjust seasoning. Serve hot with garnish.
Notes
For a spicier version, add red pepper flakes to taste.
