Creamy Tomato Basil Soup Recipe

Ingredients
  

olive oil

  • 2 tablespoons olive oil

vegetable or chicken broth

  • 2 cups vegetable or chicken broth

onion

  • 1 medium onion, finely chopped

garlic

  • 3 cloves garlic, minced

canned tomatoes

  • 2 cans whole peeled tomatoes (28 oz each)

basil leaves

  • 1 cup fresh basil leaves packed

sugar

  • 1 teaspoon sugar

salt

  • 1/2 teaspoon salt, plus more to taste

black pepper

  • 1/4 teaspoon black pepper

dried oregano

  • 1/2 teaspoon dried oregano

heavy cream or half-and-half

  • 1/2 cup heavy cream or half-and-half

red pepper flakes

  • pinch red pepper flakes (optional) for heat

garnish

  • optional fresh basil leaves or a drizzle of cream for garnish

Instructions
 

  • Heat olive oil in a large pot and sauté the onion until soft, about 5-7 minutes.
  • Add garlic and cook for 1-2 minutes until fragrant.
  • Stir in tomatoes, sugar, salt, pepper, oregano, and broth; simmer for 20 minutes.
  • Puree the soup with basil leaves using an immersion blender or in batches in a blender.
  • Stir in heavy cream, warm through, and adjust seasoning. Serve hot with garnish.

Notes

For a spicier version, add red pepper flakes to taste.
