  • 1 tablespoon olive oil (or unsalted butter)
  • 8 ounces white button mushrooms (sliced) (or cremini, baby bella, or portobello)
  • Salt and black pepper Salt and black pepper (to taste)
  • 1 cup uncooked orzo
  • tablespoons garlic cloves (minced)
  • 2 cups chicken broth or stock
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (or more to taste)
  • ¼ teaspoon salt (or as needed)
  • ½ cup heavy cream
  • ¼ cup freshly grated Parmesan cheese
  • 5 ounces fresh spinach
  • Optional squeeze of lemon juice

Instructions
 

  • Heat oil in a skillet and cook mushrooms until browned. Remove and set aside.
  • Toast orzo in the same skillet, then add garlic and cook briefly.
  • Pour in broth, add spices and salt, then simmer until orzo is tender.
  • Stir in heavy cream and Parmesan until creamy, then add spinach and cooked mushrooms. Finish with lemon if desired.

Notes

For extra flavor, squeeze fresh lemon juice before serving.
