Instructions
Heat oil in a skillet and cook mushrooms until browned. Remove and set aside.
Toast orzo in the same skillet, then add garlic and cook briefly.
Pour in broth, add spices and salt, then simmer until orzo is tender.
Stir in heavy cream and Parmesan until creamy, then add spinach and cooked mushrooms. Finish with lemon if desired.
Notes
For extra flavor, squeeze fresh lemon juice before serving.
