Ingredients
  

Eggs and Dairy

  • 3 pieces eggs
  • 1 tbsp milk (optional)
  • 1 tsp butter

Vegetables

  • 1 cup baby spinach
  • 5 pieces cremini or button mushrooms, sliced
  • 1 tsp olive oil
  • Garlic (minced, to taste) garlic to taste
  • Salt and pepper to taste salt and pepper to taste
  • 1 piece avocado, sliced

Instructions
 

  • Sauté sliced mushrooms and minced garlic in olive oil until browned (5–7 minutes).
  • Add spinach to the pan and sauté until wilted; season lightly with salt.
  • Melt butter in a separate pan over low heat. Whisk eggs and milk, then pour into the pan and stir until creamy.
  • Plate the scrambled eggs with sautéed mushrooms and spinach. Top with sliced avocado.

Notes

Feel free to add cheese or chili flakes for extra flavor.
