Ingredients
  

Pasta

  • 8 ounces Short Pasta of Choice or lentil pasta

Oil

  • 1 tablespoon olive oil or avocado oil

Seasoning

  • to taste Kosher salt and ground pepper

Salmon

  • 1 pound skinless salmon fillets

Seasoning

  • 1/2 teaspoon Italian seasoning

Garlic

  • 3-4 cloves garlic (minced)

Sun-dried Tomatoes

  • 1/4 cup sun-dried tomatoes (chopped)

Flour

  • 1 tablespoon gluten-free flour or any flour

Milk

  • 1 1/2 cups skimmed milk or any other milk

Spinach

  • 5 ounces fresh spinach or frozen, strained

Instructions
 

  • Cook pasta until al dente, drain, season, and set aside.
  • Season salmon with salt, pepper, and Italian seasoning. Cook in oil until flaky, then set aside.
  • In the same skillet, sauté garlic and sun-dried tomatoes, then stir in flour and gradually add milk to form a sauce.
  • Add spinach and cook until wilted, then combine with cooked pasta and flaked salmon. Serve hot.

Notes

Garnish with fresh parsley and pepper for extra flavor.
