Ingredients
  

Pasta

  • 1 pound rigatoni pasta
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter
  • 2 cups pumpkin puree
  • 2 cups chicken broth
  • 1/4 cup heavy cream
  • 1/2 cup sour cream
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley minced
  • 1/4 cup Parmesan cheese

Instructions
 

  • Cook pasta until al dente, then drain and set aside.
  • Sauté onion and garlic in butter until soft.
  • Mix in pumpkin, broth, cream, sour cream, and seasonings; simmer 10 minutes.
  • Combine pasta with sauce and cook 2-3 minutes until thickened.
  • Garnish with Parmesan and parsley before serving.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth.
