Ingredients
  

Pasta

  • 1 pound penne or rigatoni pasta
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4-5 cloves garlic, minced
  • 1 teaspoon fresh rosemary, finely chopped
  • 0.25-0.5 teaspoon crushed red pepper flakes, to taste
  • 15 ounces can pumpkin puree
  • 1 cup vegetable or chicken broth
  • 0.5 cup heavy cream
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup freshly grated Parmesan cheese, plus more for serving
  • 2 cups baby spinach leaves, optional

Instructions
 

  • Cook pasta in salted water until al dente, then reserve 1 cup of water and drain.
  • Sauté onion in olive oil until softened, then add garlic, rosemary, and red pepper flakes; cook until fragrant.
  • Mix in pumpkin, broth, cream, nutmeg, salt, and pepper; simmer until slightly thickened.
  • Stir in Parmesan, then add pasta and spinach; toss to coat, adding reserved water if needed.
  • Serve hot with extra Parmesan on top.

Notes

Use fresh Parmesan for best flavor and adjust red pepper flakes to taste.
