Instructions
Cook pasta in salted water until al dente, then reserve 1 cup of water and drain.
Sauté onion in olive oil until softened, then add garlic, rosemary, and red pepper flakes; cook until fragrant.
Mix in pumpkin, broth, cream, nutmeg, salt, and pepper; simmer until slightly thickened.
Stir in Parmesan, then add pasta and spinach; toss to coat, adding reserved water if needed.
Serve hot with extra Parmesan on top.
Notes
Use fresh Parmesan for best flavor and adjust red pepper flakes to taste.
