Ingredients
  

Oats base

  • 0.5 cup old-fashioned rolled oats
  • 0.5 cup milk of choice dairy or plant-based
  • 2 tablespoons Greek yogurt or cream cheese
  • 1 medium ripe peach, peeled and diced about 150g
  • 1 tablespoon maple syrup or honey
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon

Cinnamon streusel topping

  • 0.25 cup all-purpose flour or almond flour
  • 2 tablespoons brown sugar packed
  • 2 tablespoons unsalted butter, cold and cubed
  • 0.25 teaspoon ground cinnamon
  • pinch salt

Instructions
 

  • Mix flour, brown sugar, cinnamon, and salt; cut in cold butter until crumbly. Chill.
  • Combine oats, milk, yogurt, syrup, vanilla, and cinnamon in a jar; stir well.
  • Fold in diced peaches, drain excess juice if needed.
  • Top with chilled streusel; cover and refrigerate overnight.
  • In the morning, stir and serve with optional toppings.

Notes

For extra crunch, add more streusel topping before serving.
