NOT brown OR quick cook rice

can use chicken broth

milk
2% used, DIVIDED

lemon juice
+ zest from half of the lemon

finely grated parmesan cheese

fresh parsley

Instructions
Melt butter and cook diced onion until softened, 2-3 minutes.
Add rice, garlic powder, and salt; cook 1 minute, then pour in stock and 1 1/4 cups milk. Cover and boil.
Reduce heat and simmer 20 minutes, stirring occasionally until rice is tender.
Turn off heat, stir in remaining milk, lemon juice, lemon zest, Parmesan, and parsley. Adjust salt to taste.
Garnish with parsley and serve immediately.
Notes
For extra flavor, toast the rice lightly before adding liquids.
