Creamy Mushroom Chicken Recipe

Ingredients
  

Spices and Flour

  • 1/3 cup all-purpose flour
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme (divided)
  • 2 teaspoons dried oregano (divided)
  • 1 teaspoon sea salt (divided)
  • 1 teaspoon freshly ground pepper (divided)
  • 1 teaspoon chili flakes (plus more to taste)

Chicken and Oil

  • 4 pieces boneless skinless chicken breasts (sliced in half)
  • 4 tablespoons olive oil (divided)

Aromatics and Vegetables

  • 3 cloves garlic (minced)
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup Kalamata olives (sliced)
  • 2 cups mushrooms

Sauce and Finish

  • 1/2 cup heavy cream
  • 1/2 cup chicken stock
  • 1 cup Parmesan cheese (freshly grated)
  • 2 cups fresh spinach

Instructions
 

  • Mix flour, paprika, thyme, oregano, salt, and pepper. Season chicken with remaining spices.
  • Dredge chicken in flour mixture, then sear in 2 tbsp olive oil until golden. Set aside.
  • Sauté garlic, sun-dried tomatoes, olives, and mushrooms in remaining oil for 3-5 minutes.
  • Add cream, stock, Parmesan, spinach, and seasonings. Simmer until thickened. Return chicken to pan and cook until done.
  • Adjust seasonings, serve warm, and store leftovers in fridge for 3-4 days.

Notes

For a richer flavor, use freshly grated Parmesan and high-quality ingredients.
